Apple Cinnamon Pancakes

Apple season is in full force and we bought way too many from our apple picking outing last week. I love experimenting with traditional recipes, so J and I decided to make some cinnamon apples for our pancakes and they turned out SO good. Happy Sunday morning & enjoy! 

P.S. We definitely made these while dancing around to hit songs of the 2000s, I guess we're those people now...

For the Pancakes

  1. 1 1/2 cups all-purpose flour

  2. 3 1/2 teaspoons baking powder

  3. 1 teaspoon salt

  4. 1 tablespoon white sugar

  5. 1 cup vanilla almond milk (or regular milk)

  6. 1 egg

For the Apples

  1. 2 tablespoons butter

  2. 2 apples, peeled and diced

  3. 2 Tablespoons brown sugar

  4. 1/2 teaspoon cinnamon

  5. 1/3 cup maple syrup

For the Pancakes

  1. In a large bowl, combine flour, baking powder, salt and sugar. Add the almond milk and egg and mix.

  2. Heat a buttered pan on medium heat. Pour batter onto the pan and brown on both sides.

For the Apples

  1. Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat until apples become tender. Add syrup and stir. Serve over pancakes!
