Croque Madame Sandwich

Today's post is hopping on to the blog just in time for Easter! (See what I did there) I've told you before that I absolutely adore cooking and baking for spring. The weather has been so dreary here in Indy, so it feels like the only way to get in the spring mindset is to put together something festive in the kitchen. 

Every year, my family goes to a big Easter Brunch. This year, we unfortunately won't be together, so I knew J and I would have to make something special to start a little tradition on our own. That's where the idea for these Croque-Madame sandwiches were born. And, trust me they are by far the most delicious brunch treat i've made yet. 
 
Truth be told, i've been making the traditional Croque-Monsieur for a few years, and i'm really not sure why it took me so long to add an egg to it for a delicious brunch-time spin. There are a few steps involved in the process, but I promise it's worth it.
