One Pot Beef Stroganoff Stew

Brrrr! It has been a chilly for few weeks here in Indianapolis. Negative temperatures have me reaching for a few extra covers at night, bundling up in my favorite Patagonia Pullover (and new Fuzzy Socks) and craving warm dishes for lunch and dinner.  

Full transparency here: I wasn't going to blog about this Beef Stroganoff Stew (really wasn't). 

I wasn't planning on removing the lamp, picture frame and coaster from my nightstand in the bedroom setting up a pretty pink base and loading my SD Card into my camera to get the "perfect" shot. 

And, I really wasn't planning on standing over top it at strange angles that most people would thing i'm insane for. But, my husband, brother and I each took the first bite and it was so good I just couldn't resist spilling the strogranoff (see what I did there?!) 

So how did this One Pot Beef Stroganoff Stew come about on a supposedly lazy Sunday. Pinterest. You guys, it gets me EVERY. FREAKIN. TIME. I saw a similar recipe, thought it sounded delicious, and headed to my local grocery to make it for dinner. But, I forget a few things the recipe called for (I blame the cold weather) and ended up with the most delicious winter meal. 

Hearty, rich and full of wintery spices this stew really is a party in your mouth. I even added a few additional egg noodles so that it would fill up the men in house! I have a feeling it would be great for growing kiddos too.
