Three of My Most-Loved Spring Cocktails

If you've been around here a while, then you know I love to whip up a cocktail every once in a while. As the weather get's nicer, J and I start to spend our evenings grilling out on our back balcony with burgers or kabobs on the grill and fancy cocktails in our hands.

It has become such a weeknight treat for us, and a time when we're both able to put down our phones, computers and tablets and just spend time together. More often than not, the cocktails I whip up are from the ghosts of blog posts past. I'm fortunate that my creativity here has helped us learn to make drinks that make us feel like we're headed out for a date night even though we're really just sitting on our own balcony.

Today, I'm sharing three of my (and your) most-loved spring cocktails from the Simply J and K archives. I hope that by putting them in one handy blog post, you'll have an easy resource with fun, new recipes to try out this season.

Pineapple Sage Margarita

Ingredients

1 pineapple

1 oz tequila

1/2 oz triple sec

1 lime (juice)

Handful of Ice

Sprig of Sage

Instructions

  1. Add all ingredients (except for the sage) in a blender and blend until smooth.

  2. Pour into 2-3 glasses and and garnish with sage. Serve quickly and enjoy!

Rosemary Thyme Gin and Tonic

Ingredients: 

2 oz gin

5 oz tonic

1 Slice Grapefruit

1 Stalk Thyme

Handful of Ice

Instructions:

  1. Mix gin, tonic, and ice.

  2. Garnish with grapefruit and thyme!

Tequila Paloma

Ingredients:

1/4 cup grapefruit juice

1/4 cup tequila

1/4 cup club soda

1 squirt of sugar syrup

dash of salt

handful of ice

Instructions:

  1. Fill a plate with salt and wet the rim of your glass. Dip the glass in it for a salted rim. Add grapefruit and lime slices to the rim.

  2. Mix all the ingredients in your cup and stir until sugar syrup is well mixed.

  3. Add ice and enjoy!
