An Antioxidant Packed Acai Bowl

Happy Monday, guys! 

I hope you had an amazing weekend. I headed out to another [solidcore] class, which has quickly become a favorite workout of mine. If you haven't heard of it it's essentially pilates but a bit more extreme. It focuses on your core (which I struggle with big time) and helps you tone, with the help of a fancy machine. J and I picked up a few more pieces for our home and headed over to check on the progress. It's amazing how much it can change in just one week! We're nearing our move in date, so I have a feeling the next few weekends will involving packing and purging. 

I'm very excited for today's blog post because I've put together a delicious antioxidant packed Acai bowl that is the perfect morning treat. Berries are filled with antioxidants and can help your body fight off disease. This bowl boosts your immune system and improves your skin health (win). I've been making it the past few weeks as part of my transition to plant-based recipes, and it gives me a huge burst of energy before I head off to work. 

So, what's in it? I mix a frozen Acai packet from Trader Joe's with some frozen berries and a banana and top with just a few fresh berries. In the bowl i've photographed here I also added in some coconut and Dark Chocolate as a weekend treat! Keep reading for measurements!

That's it! It's really simple, but it's the perfect healthy breakfast for a weekday morning. Even better, you can make it the night before and refrigerate and it tastes delicious in the morning!
